This Healthy Fig/Walnut/Cranberry mix is a simple recipe that combines the natural sweetness of figs with the earthy richness of walnuts, offering a nutrient-packed snack that’s full of fiber, healthy fats, and natural sugars. Perfect for a quick energy boost and as a wholesome treat or dessert. Makes about 3 or 4 servings, so multiply accordingly.
Instructions/Ingredients:
Ahead of time: soak 6 dried organic figs (stems removed and figs chopped) and 12 apple-sweetened dried organic cranberries in good drinking water in a shallow bowl to rehydrate them.
Blanch ¼ cup of walnuts (roughly chopped; they need not be organic; their thick shells protect them) by putting them into a pot that has ½ cup of boiling water; remove them almost immediately and rinse in good water.
One or two hours later: add 1 Tablespoon of black sesame seeds and the blanched walnuts to the rehydrated items; drain the water to drink later.
Prepare the mixture: In a food processor or mixer, combine the above with 2 T of any organic sugar-free nut butter. If desired, add 1/8 teaspoon of vanilla extract, and a pinch of salt. Pulse until everything is finely chopped and the mixture comes together into a sticky dough-like consistency.
Eat like very rich pudding. If you want to serve them as bars, then line a small baking dish (about 8×8 inches) with parchment paper or lightly grease it. Transfer the mixture to the dish and press it down firmly to create an even layer. Use a spatula or your hands to compact the mixture. Place the dish in the refrigerator to chill for at least 1 hour to firm it up.
Bedtime snack:
At least an hour before: soak 1 teaspoon of chia seeds in good drinking water with ½ teaspoon of ground Ceylon cinnamon.
Eat ½ hour before going to bed. This helps your body reset overnight.
